Skodalia (garlic sauce)

A traditional Greek dish made by combining crushed garlic with a bulky base - which may be a purée of potatoes, walnuts, almonds, or liquid-soaked stale bread- and then beating in olive oil to make a smooth emulsion. Vinegar is often added. Usually is served along with fish, often bakaliaros (cod) Or with fried zucchini and eggplant

Tzatziki

Greek sauce served with grilled meats.
Tzatziki is made of strained yogurt (usually from sheep or goat milk) mixed with cucumbers, garlic, salt, olive oil, and sometimes lemon juice, and dill or mint or parsley.


Tzatziki is always served cold.

Fish roesalad
(Tamamosalata)

Taramasalata is traditionally made from taramas, the salted and cured roe of
the cod or the carp, though blends based on other forms of fish roe have become more common. The roe is mixed with either bread crumbs or mashed potato, and lemon juice, vinegar and olive oil. It is usually eaten as a dip.

Greek salad or choriatiki salad ( village salad) is a popular salad in Greek cuisine generally made with pieces of tomatoes, cucumbers, onion, feta cheese, and olives and dressed with salt, pepper, Greek oregano, and olive oil. Common additions include green bell pepper slices or caper berries
